Chilli Con carne
Ingredients:
- 500 g mince
- 2 onions thinly sliced
- 2 cloves garlic chopped
- 1 can Coles Mexican style Chilli beans ( these are rather spicy hot, alternative red kidney beans)
- 1 can diced tomatoes
- 2 Tablespoons tomato paste
- 1 sachet Fajita spice mix / or Taco spice mix
- 1/3 cup chopped coriander (optional)
- 1 large avocado
- Juice of 1 lime
- Olive oil
- 450g Family pack Microwave Brown Rice ( or what ever rice you prefer)
- Grated tasty or mozzarella cheese
- 1 pack Doritos-optional
- Greek yoghurt.
Method:
- Fork mash beans , set aside
- Using olive oil sauté onions & garlic
- Add mince and cook till brown
- Add tomatoes, tomato paste, mashed beans, fajita/taco mix and stir
- Simmer, stirring occasionally approx. 10 mins or till thickened
- Add coriander and stir through if using
- Meanwhile cook rice according to pack instructions
- Lightly mash avocado & add lime juice stir to combine
- Serve chilli con carne with rice, smashed avocado, grated cheese (& Doritos if using)
**The Dimitri Special**Add a dollop or 2 of Greek yoghurt for a creamy texture – it also helps with the spice for those who aren’t use to it.
