Chilli Con carne

Ingredients:

  1. 500 g mince
  2. 2 onions thinly sliced
  3. 2 cloves garlic chopped
  4. 1 can Coles Mexican style Chilli beans ( these are rather spicy hot, alternative red kidney beans)
  5. 1 can diced tomatoes
  6. 2 Tablespoons tomato paste
  7. 1 sachet Fajita spice mix / or Taco spice mix
  8. 1/3 cup chopped coriander (optional)
  9. 1 large avocado
  10. Juice of 1 lime
  11. Olive oil
  12. 450g Family pack Microwave Brown Rice ( or what ever rice you prefer)
  13. Grated tasty or mozzarella cheese
  14. 1 pack Doritos-optional
  15. Greek yoghurt.

 

Method:

  1. Fork mash beans , set aside
  2. Using olive oil sauté onions & garlic
  3. Add mince and cook till brown
  4. Add tomatoes, tomato paste, mashed beans, fajita/taco mix and stir
  5. Simmer, stirring occasionally approx. 10 mins or till thickened
  6. Add coriander and stir through if using
  7. Meanwhile cook rice according to pack instructions
  8. Lightly mash avocado & add lime juice stir to combine
  9. Serve chilli con carne with rice, smashed avocado, grated cheese (& Doritos if using)

 

**The Dimitri Special**Add a dollop or 2 of Greek yoghurt for a creamy texture – it also helps with the spice for those who aren’t use to it.
